Carrot Cake Mix Cookies
This easy carrot cake mix cookies recipe with cream cheese frosting is most commonly enjoyed in spring for Easter, but can certainly be enjoyed all year long! Top these frosted carrot cake cookies with sprinkles, pecans, or carrot designs.

- 1 box carrot cake mix
- 2 large eggs
- 1/2 cup vegetable oil
Toppings
- 1 container cream cheese frosting
- green frosting
- orange frosting
- pecans (halved & chopped)
First, combine cake mix, eggs, and oil in a large bowl.
Next, chill the dough in the fridge for 30 minutes.
Preheat the oven to 350 degrees.
Next, using a cookie scoop, shape the dough into one-inch round balls and place them on a baking tray lined with parchment paper, about 2" apart.
Bake for 9-11 minutes.
Remove the cookies from the oven and let them rest for 2 minutes before transferring them to a rack to cool completely.
Lastly, frost the cookies with vanilla icing and add your chocolate of toppings (pecan halves, pecan crumbles, sprinkles, or a carrot design).
