Easter Candy Cookies
These easter candy cookies are made with a chocolate cake mix, chocolate mini eggs, and butterscotch chips. Feel free to get creative with this easter dessert recipe and swap in other leftover Easter candy such as mini Cadbury eggs.

- 1 box chocolate cake mix
- 2 large eggs
- 1/2 cup vegetable oil
- 1/3 cup butterscotch chips
- 2/3 cup chocolate mini eggs roughly chopped
First, combine cake mix, eggs, and oil in a large bowl.
Next, fold in the butterscotch chips and chopped mini chocolate eggs.
Then, chill the dough in the fridge for 30 minutes.
Preheat the oven to 350 degrees.
Next, using a cookie scoop, shape the dough into one-inch round balls and place them on a baking tray lined with parchment paper, about 2" apart.
Bake for 9-11 minutes.
Next, remove the cookies from the oven and let them rest on the baking tray for 2 minutes before transferring them to a wire rack to cool completely.
