Engagement Party Sugar Cookies

Simple homemade engagement party sugar cookies with royal icing that is perfect for beginners. In this post, we will make diamond ring sugar cookies, heart sugar cookies, and XO cookies.

Ingredients
  

  • Your favorite sugar cookie recipe
  • Your favorite royal icing recipe
  • Red food coloring gel
  • Silver and gold sugar crystal mix

Instructions
 

Bake The Cookies

  • Follow instructions for your favorite sugar cookie recipe.
  • When cutting out the dough before baking, use a diamond ring, heart, X, and O cookie cutters.
  • After baking, let the cookies cool completely on a rack before frosting them.

Make The Royal Icing

  • Follow instructions for your favorite royal icing recipe. The consistency should be thick, 'piping' icing.
  • Transfer 1/4 icing to a separate bowl, add red food coloring gel, and mix thoroughly. Add additional drops of food gel until you have reached your desired red. The liquid from the food coloring gel should have made the icing a 'flooding' consistency. If not, add a teaspoon of water and mix thoroughly.
  • Fill a large pastry bag with the red flood icing and secure the bag with a rubber band. Set it aside until it's time to decorate the heart cookies.
  • Fill a large pastry bag with 1/4 white piping icing and secure the bag with a rubber band. Set it aside until tomorrow, when it is time to write 'ENGAGED" on the red heart cookies.
  • Fill a large pastry bag with 1/2 white piping icing and secure the bag with a rubber band.

Decorate The Diamond Ring Cookies

  • Pour silver sugar crystalls on a small plate. Set aside.
  • Cut a TINY hole at the end of the bag with the 1/2 white piping icing.
  • Outline the ring of the cookie with icing two times.
  • Place the cookie face down on a plate of sugar crystals.
  • Remove the cookie from the sugar crystals.
  • Lightly tap the cookie to remove any excess sugar crystals.
  • Set cookie aside and repeat this step with the remaining ring cookies.
  • Outline the diamond of the cookie with icing.
  • Fill inside of the outline with icing.
  • Use a toothpick to fill any small spaces and remove any air bubbles.
  • Once the top layer of icing has hardened, outline the diamond with icing again.
  • Add a horizontal line from the left end to the right end of the diamond.
  • Create a 'w' shape on the top half of the diamond.
  • Create a 'v' shape on the bottom half of the diamond.

Decorate The Heart Cookies

  • Cut a TINY hole at the end of the bag with the 1/4 red flood icing.
  • Slowly outline each heart cookie with red icing.
  • Cut the end of the pastry bag, to make the hole a bit bigger.
  • Flood each heart cookie with red icing.
  • Let the icing harden overnight.
  • Cut a TINY hole at the end of the bag with the 1/4 white piping icing.
  • Pratice writing "ENGAGED" on a napkin or parchment paper.
  • Write "ENGAGED" on each heart cookie.

Decorate The XO Cookies

  • While the red icing on the heart cookies is hardening, decorate the XO cookies.
  • Pour gold sugar crystals on a small plate. Set aside.
  • Continue using the pastry bag with the 1/2 white piping icing that we used on the diamond ring sugar cookies.
  • Outline each 'X' and 'O' cookie with white icing. Set the 'O' cookies aside until further noted below.
  • Next, cut the end of the pastry bag to make the hole a bit bigger (this will make it easier to flood each cookie with piping icing).
  • Flood the 'X' cookie with icing.
  • Place the cookie face down on a plate of sugar crystals.
  • Remove the cookie from the sugar crystals.
  • Lightly tap the cookie to remove any excess sugar crystals.
  • Set cookie aside and repeat this step with the remaining 'X' cookies.
  • Flood the 'O' cookie with icing.
  • Place the cookie face down on a plate of sugar crystals.
  • Remove the cookie from the sugar crystals.
  • Lightly tap the cookie to remove any excess sugar crystals.
  • Set cookie aside and repeat this step with the remaining 'O' cookies.
