Funfetti Cake Mix Cookies
This easy funfetti cake mix cookies recipe is made with a cake mix, eggs, oil, and rainbow sprinkles. These rainbow funfetti cookies are perfect for a birthday, St. Patrick's Day, and Pride in June.

- 1 box vanilla cake mix
- 2 large eggs
- 1/2 cup vegetable oil
- 1/2 cup rainbow sprinkles plus more for topping, if desired
First, combine cake mix, eggs, and oil in a large bowl.
Next, fold in the sprinkles.
Then, cover and chill the dough in the fridge for at least 30 minutes (up to overnight).
Preheat the oven to 350 degrees.
Using a cookie scoop, shape the dough into one-inch round balls and place them on a baking tray lined with parchment paper, about 2″ apart.
Optionally, roll the cookie dough balls in sprinkles.
Bake for 9-11 minutes.
Next, remove the cookies from the oven and let them rest on the baking tray for 2 minutes before transferring them to a wire rack to cool completely.
