Quesadilla Board
This quesadilla board recipe includes the ingredients to make 3 quesadillas: 1 beef, 1 chicken, and 1 veggie. If you want to stick to just beef, for example, omit the chicken and veggies and triple the beef.

Quesadillas
- 3 tbsp Butter unsalted
- 6 large Tortillas 8 inch
- 6 cups Cheese* shredded
- 3/5 lbs Ground beef cooked, seasoned with taco seasoning
- 1.5 cups Chicken breasts shredded, seasoned with taco seasoning
- 2 Bell peppers + 1 yellow onion sauteed, seasoned with salt and pepper
- Taco seasoning for chicken and beef
- Salt and pepper for veggies
Veggies
- 1 cup Grape tomatoes
- 6 mini Sweet peppers halved
Dips
- Sour cream
- Salsa verde
- Queso
- Salsa
- Sweet corn dip
- Guacamole
Make The Quesadillas
Melt one tbsp of butter in a large non-stick skillet over medium-low heat.
Place one tortilla on the skillet.
Sprinkle one cup of shredded cheese on the tortilla.
Once the cheese begins to melt, add the ground beef.
Sprinkle one cup of shredded cheese on top of the ground beef.
Once the cheese begins to melt, place one tortilla on top of the cheese.
Once the bottom tortilla begins to turn a golden brown color (about 1-2 minutes), carefully flip the entire quesadilla and cook for an additional 1-3 minutes.
Remove the quesadilla from the skillet and repeat these steps two more times, once with the shredded chicken and once with the sauteed veggies.
Assemble The Board
Cut each quesadilla into 8 equal pieces.
Pour the dips into small glass bowls.
Arrange the small glass bowls from the bottom left to the upper right corner.
Position 2-3 quesadilla slices on alternating sides of each small glass bowl, with the exception of the top right corner and bottom, left corner.
Add the mini sweet peppers around some of the small glass bowls, to cover any white spaces.
Fill remaining white sections with additional quesadilla slices and chips.
Cook time does not include the time to shred the chicken, cook the beef, or sautee the veggies.
* Your choice for cheese! My favorites are sharp cheddar and fiesta blend.
