This mini rainbow pancakes recipe is made using a pancake mix and food coloring gel. These mini pancakes will most certainly make them disappear faster than you can make them. Enjoy them for a rainbow party, birthday, St. Patrick’s Day, Pride or just because.

Inspiration for this rainbow pancake board came from me searching (for what felt like a very long time) to find festive St. Patrick’s Day brunch recipes.

Rainbow Pancake Ingredients
While you can certainly use your favorite homemade pancake recipe, I choose a pancake mix and it worked wonderfully.
Therefore, the only ingredients you need for this recipe include:
- Pancake mix: plus mix ingredients
- Food coloring gel: my favorite brand is AmeriColor and this student kit is the most affordable way to buy each color of the rainbow.
Rainbow Pancakes: Equipment
- Griddle: using a griddle instead of a skillet on the stove top will cut your cooking time in half since you’ll be able to cook twice as many pancakes at once.
- Squeeze bottles: these bottles will give you the most control over the batter so you can achieve perfectly round mini pancakes. I only have 4 squeeze bottles, but it was super quick and easy to rinse in the sink once I was done with one color and move onto the next.
- Mixing bowls: you’ll need one large bowl to prepare the pancake mix and then 5 or 6 small bowls to make each color each.
How To Make Rainbow Pancakes
- First, prepare the pancake batter according to the box (or recipe) instructions.
- Next, distribute the batter across 6 mid-size mixing bowls.
Note: if you are planning to arrange your pancakes in the shape of a rainbow, you’ll want to distribute the most batter for red and the least amount of batter for purple.
- Set the griddle to the heat slightly above the ‘keep warm’ setting.
- Next, transfer red batter into a liquid measuring cup, and then into a squeeze bottle. (Note: it’s easiest to fill the squeeze bottle using a liquid measuring cup because it has a spout.)
- Then, hold the squeeze bottle at a 90-degree angel over the griddle and apply a light pressure to release the batter.
- Create a 2-inch circle with the batter. Repeat with remaining red batter, or until you use up all the space on your griddle.
- Flip the mini pancakes once you see air bubbles across the majority of the mini pancake (as pictured above).
- Cook for another 2-3 minutes.
- Remove pancakes from heat and finish cooking remaining rainbow pancakes.
Frequently Asked Questions
Is it OK to put food coloring in pancakes?
Of course! If you can bake with food coloring, you can certainly add it to pancakes. Just make sure to fully cook the pancakes before serving.
How to keep pancakes from browning
To prevent the rainbow pancakes from browning, I recommend cooking the pancakes on a griddle with the heat set slightly above the ‘keep warm’ function.
How to achieve vibrant pancake colors?
I recommend a food coloring gel, such as the Americolor brand. Avoid a liquid food color like this one if you want vibrant colors.
