Chicken Sausage, Peppers and Onions

Looking for a low-ish carb recipe for dinner that’s actually filling? Look no further. This chicken sausage, peppers, and onion recipe is – you guessed it – just 3 ingredients, delicious, and ready in just 30 minutes. Saute the sliced peppers and onions. Heat the pre-cooked chicken sausage according to the package instructions. Slice the warmed chicken sausage in to bite-size pieces. Combine the chicken sausage, peppers and onions. Voila! Dinner is served.

This is one of my favorite last-minute dinner ideas because I can run into Trader Joe’s, grab the chicken sausage, peppers, and onions, and have dinner ready within the hour.

The Smoked, Apple Chardonnay chicken sausages I used in this recipe are from Trader Joe’s. Trader Joe’s also sells Spicy Italian, Garlic Herb, Spicy Jalapeno, Sweet Apple, and Sweet Italian Style Chicken Sausages.

Substitute the red and orange peppers for green to save a few dollars at the grocery store or for a less-sweet option.

Chicken Sausage, Peppers and Onions

Easiest chicken, sausage, peppers and onions recipe you need on busy nights.

Ingredients
  

  • 2 medium Onions yellow
  • 3 Peppers 2 red, 1 orange
  • 4 Chicken sausage links fully cooked
  • Salt and pepper to taste

Instructions
 

  • Sautee sliced onions and peppers in a large nonstick pan over medium heat for about 20-25 minutes. Season with salt and pepper.
  • While the onions and peppers are cooking, prepare sausage according to package instructions (I cooked the Trader Joe's links in the oven at 350 for 15 minutes).
  • Slice each warmed sausage link into 6 equal parts.
  • Plate the onions and peppers. Top with sausage slices.

Notes

  1. This is a great meal to cook Sunday night for meal prep and eat later in the week!
