Easter Candy Cookies

I have been making some variation of this Easter cookie recipe for years.

Some of the ingredients remain the same – especially the chocolate! – but I often change the Easter candy up a bit. For example, I’ll use Hershey’s candy coated eggs or Cadbury mini eggs.

Whatever Easter candy I use though, these easy Easter cookies always disappear quickly, so I typically make them as soon as possible after St. Patrick’s Day.

How To Make Easter Candy Cookies

How To Make Easter Candy Cookies Collage

  • First, combine cake mix, eggs, and oil in a large bowl.
  • Next, fold in the butterscotch chips and mini chocolate eggs.
  • Then, chill the dough in the fridge for 30 minutes.

  • Preheat the oven to 350 degrees.
  • Next, using a cookie scoop, shape the dough into one-inch round balls and place them on a baking tray lined with parchment paper, about 2″ apart.

  • Bake for 9-11 minutes.
  • Next, remove the cookies from the oven and let them rest on the baking tray for 2 minutes before transferring them to a wire rack to cool completely.
