These easy easter candy cookies are made with a chocolate cake mix, chocolate mini eggs, and butterscotch chips. Feel free to get creative with this easter dessert recipe and swap in other leftover Easter candy such as mini Cadbury eggs.

I have been making some variation of this Easter cookie recipe for years.
Some of the ingredients remain the same – especially the chocolate! – but I often change the Easter candy up a bit. For example, I’ll use Hershey’s candy coated eggs or Cadbury mini eggs.
Whatever Easter candy I use though, these easy Easter cookies always disappear quickly, so I typically make them as soon as possible after St. Patrick’s Day.

- Cake mix
- Eggs
- Vegetable oil
- Butterscotch chips
- Chocolate mini eggs

How To Make Easter Candy Cookies
- First, combine cake mix, eggs, and oil in a large bowl.
- Next, fold in the butterscotch chips and mini chocolate eggs.
- Then, chill the dough in the fridge for 30 minutes.
- Preheat the oven to 350 degrees.
- Next, using a cookie scoop, shape the dough into one-inch round balls and place them on a baking tray lined with parchment paper, about 2″ apart.
- Bake for 9-11 minutes.
- Next, remove the cookies from the oven and let them rest on the baking tray for 2 minutes before transferring them to a wire rack to cool completely.
