Strawberry Cake Mix Cookies

These soft and chewy chocolate strawberry cake mix cookies are made with just four ingredients and require five minutes to prepare, making them the perfect cookie to whip up at the last minute for so many occasions.

I have never been a fan of strawberry desserts. However, I was determined to include more spring colors on my Easter desserts board. After a bit of experimenting, I now enjoy strawberry desserts (at least this one) and found a cookie for my Easter desserts board.

Ingredients To Make Strawberry Cake Mix Cookies

The following four ingredients are needed to make these cookies:

  1. Strawberry Cake Mix
  2. Eggs
  3. Canola Oil
  4. Pastel (Easter) M&Ms

Equipment To Make Strawberry Cake Mix Cookies

The following equipment is needed to make these cookies:

  1. Large mixing bowl: to combine the cookie ingredients.
  2. Spatula: to mix cookie ingredients.
  3. Measuring cups: to measure the oil and M&Ms.
  4. Parchment paper or silicone baking mats: to line the baking tray.
  5. Baking tray: to bake the cookies.
  6. Cookie scooper: to prepare equal-size cookies.
  7. Turner: to move the cookies from the baking tray to the cooling rack.
  8. Cooling rack: to cool the baked cookies.

  2. Valentine’s Day, or a Valentine’s Day desserts board

How To Make Strawberry Cake Mix Cookies

  1. First, mix the cake mix, eggs, and canola oil in a large mixing bowl.
  2. Next, stir in the M&Ms.
  3. Refrigerate the dough for 15 minutes.
  4. Then, scoop 12 one-inch round balls onto a lined baking tray.
  5. Place the baking tray into the refrigerator for 15 minutes.
  6. Bake the cookies in a 350-degree oven for 10-11 minutes.
  7. Remove the cookies from the oven and transfer the cookies to a cooling rack using a turner.
  8. Finally, repeat Step 4 – Step 7 with the remaining dough.

1. Do I Need To Refrigerate The Cake Mix Cookie Dough Before Baking?

Nope! Only refrigerating the cookies if you want thick and chewy cookies. 

2. How To Store Cake Mix Cookies?

Once the baked cookies have completely cooled, store them in an air-tight container at room temperature or in the fridge.

3. How Long Will Cake Mix Cookies Last?

If stored at room temperature, the cookies will be fresh for about three days.  If stored in the fridge, the cookies will be fresh for about one week.

Instructions
 

  • Mix the cake mix, eggs, and canola oil in a large mixing bowl.
  • Stir in the M&Ms.
  • Refrigerate the dough for 15 minutes.
  • Scoop 12 one-inch round balls onto a baking tray, lined with parchment paper or silicone baking mats.
  • Place the baking tray into the refrigerator for 15 minutes.
  • Preheat oven to 350 degrees.
  • Bake the cookies for 10-11 minutes.
  • While the cookies are in the oven, use the remaining dough to scoop 12 one-inch balls onto a baking tray, lined with parchment paper or silicone baking mats. Place the baking tray into the refrigerator for 15 minutes.
  • Remove the first batch of cookies from the oven and transfer the cookies to a cooling rack using a turner.
  • Bake the second batch of cookies for 10-11 minutes.
  • Remove the second batch of cookies from the oven and transfer the cookies to a cooling rack using a turner.
