A savory croissant casserole recipe made with buttery croissants, melted swiss cheese, honey ham (or bacon)! Assemble the overnight breakfast casserole the night before and enjoy it for a relaxing Saturday morning or brunch party.
Croissants are easily one of my favorite breakfast foods (move over donuts and bagels).
So, every time I walk by the croissants in Costco, I have to convince myself that 12 jumbo croissants are wayyy too many for a household of 2.5 (can’t forget Jakey!), even if they only cost $5.
When Nick told me he was having some friends visit for the weekend, I figured it was finally the perfect time to experiment with a croissant casserole (even if this ‘experiment’ was a complete fail, it would hopefully cure a hangover)!
Luckily, the experiment was far from a fail and now we have this savory croissant casserole recipe.
And, I got some pretty good feedback that I incorporated into a second batch: swap ham for bacon.

Savory Croissant Casserole Equipment
- Large mixing bowl: to mix the eggs, half-and-half, salt, and pepper.
- Whisk: to mix the eggs, half-and-half, salt, and pepper.
- Cutting board: to cut the croissants, ham, and cheese.
- Chef’s knife: to cut the croissants, ham, and cheese.
- 9×13 casserole dish: to assemble and serve the casserole.
- Turner: to serve the casserole.
How To Make A Savory Croissant Casserole Recipe
1. Prepare The Casserole Ingredients
First, slice each croissant into six small pieces (as pictured above). Set aside.
Next, slice the honey ham and swiss cheese. Set aside.
In a large mixing bowl, beat the eggs.
Then, add the half-and-half, salt, and pepper to the bowl and mix to combine.
2. Assemble The Casserole
Grease a 9×13 casserole dish with cooking spray.
Line the bottom of the dish with about half of the croissant pieces.
Next, add a layer of sliced ham and swiss cheese (don’t worry about covering every part of the croissant layer).
Add the remaining croissant pieces on top.
Pour the egg mixture over the casserole dish.
Using your hands, push the croissant pieces into the egg mixture.
Then, add more cheese and ham to fill any ‘gaps’ in the casserole.
Cover the casserole with plastic wrap and refrigerate for four to 10 hours.
3. Bake The Casserole
One hour before you are ready to bake the casserole, remove it from the fridge and sit it on the counter to come to room temperature for about one hour.
Preheat the oven to 375 degrees.
Cover the casserole with foil and bake for 40 minutes.
Remove the casserole from the oven and let it sit for five minutes before serving.
Garnish with freshly diced chives.

This casserole tastes great with Vermont maple syrup, Trader Joe’s Everything But The Bagel seasoning, or Siracha (for a kick).

Reheating Instructions
This casserole can dry out easily! Here’s the best way to reheat the casserole:
- Microwave one piece at a time with a small cup of water in the microwave, OR
- Place a 1/2 tbsp of butter on the casserole when you microwave it.
